* WHAT IS KIMCHI ?

A lively approach to pickles.Nearly every household in Korea has emothersf own special recipe for Kimchi. Hot Pickles.
It began as a way of preserving vegetables to get one through very harsh Korean winters. Through lactic acid production and slow fermentation at low temperatures a proper ripening and preservation take place. Red pepper powder, garlic, ginger, green onion and radish are mixed together to add seasoning. Kimchifs origins are in the 7th Century. Its food value in vitamins and minerals were greatly appreciated. Today it is reported that Kimchi also possess good anti cancer qualities.
This fulfils the Korean philosophy on food. Not only does it taste good, it does you good.
